One-Pot Lasagna Soup

Few dishes are as comforting on a chilly winter day as a hearty soup. For a decadent delight that can be whipped up with minimal prep, look no further than this One-Pot Lasagna Soup. 

It has all the classic flavors of traditional lasagna—creamy cheese, tender pasta, and robust tomatoes—but with the ease of a single pot. Plus, your natural gas stove is the perfect cooking companion; its instant, even heat will help you make this dish in less than 20 minutes. 

Perfect for busy weeknights and cozy Sundays alike, this recipe is one you’ll return to again and again.

Ingredients: 

1 pound lean ground beef 
1 medium yellow onion, chopped 
1 can (28 ounces) petite diced tomatoes, undrained 
1 can (15 ounces) tomato sauce 
1 teaspoon basil leaves 
1 teaspoon oregano leaves 
1 teaspoon garlic powder 
1/2 teaspoon onion powder 
3/4 teaspoon salt 
1/4 teaspoon ground black pepper 
32 ounces chicken stock 
8 ounces (about 10) lasagna noodles, broken into pieces 
1 cup ricotta cheese, to serve 
Shredded mozzarella cheese, to serve

Instructions: 

  1. Brown the ground beef in a pot or large saucepan over medium heat. Drain off the fat.  
  2. Add the onion, then cook and stir for 2 to 3 minutes. 
  3. Stir in the tomatoes, tomato sauce, seasonings, salt, pepper, and stock, and bring it to a boil. 
  4. Add lasagna noodle pieces and cook for 6 to 8 minutes, or until the noodles are tender. 
  5. Ladle the soup into serving bowls. Top with a dollop of ricotta and sprinkle with mozzarella.
