Lemon Herb Chicken Skewers

Sizzling Summer Delight: Grilled Lemon Herb Chicken Skewers on a Natural Gas Grill

Summer is the perfect season to fire up the grill and enjoy delicious meals outdoors. Using a natural gas grill makes it easy and convenient to cook up a delicious meal without the hassle of charcoal or propane tanks. This mouth-watering recipe for grilled lemon herb chicken skewers that’s sure to become a family favorite. Packed with flavor and easy to prepare, these skewers are perfect for a summer BBQ or a weeknight dinner.

Ingredients:

  • 2 pounds of boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 2 teaspoons lemon zest
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into wedges
  • Wooden or metal skewers

Instructions:

Prepare the Marinade: In a large bowl, whisk together olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, parsley, salt, and black pepper.

Marinate the Chicken: Add the cubed chicken to the bowl and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more intense flavor.

Preheat the Grill: Preheat your natural gas grill to medium-high heat. This ensures even cooking and a nice sear on the chicken.

Assemble the Skewers: If you’re using wooden skewers, soak them in water for about 30 minutes to prevent them from burning. Thread the marinated chicken, bell peppers, and red onion onto the skewers, alternating between chicken and vegetables.

Grill the Skewers: Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature of the chicken should reach 165°F.

Serve and Enjoy: Remove the skewers from the grill and let them rest for a few minutes. Serve the skewers with a side of grilled vegetables, a fresh salad, or your favorite summer side dish.
